Mmmm, cupcakes!!!

My adventures in baking have been few and far between, but yesterday during my lunch break I whipped up a batch of green tea cupcakes from the Vegan Cupcakes Take Over the World cookbook. They sunk in the middle when they cooled, but I just filled the holes with icing so they look beautiful. If anyone knows what makes cakes fall in the center and how to prevent or at least lessen the effect I would love to hear it. Also, if anyone knows a place in Lexington that sells dragées (those silver sugar balls,) please share; Philip and I went to several grocery and specialty stores before giving up on our search. I finished the flowers and I can't help but to think how nice they would look with the dragées in the centers.

I'm sure you will, but please check the ingredients of the silver balls when you do find them. For some reason in England they have geletin in them which is really annoying...

I don't know where I read it but recently there was an article about how the dragees you're looking for are being taken off the market because, after all this time, it is being determined that they are not good for people to eat. You're right though, that would have been the fait de accompli of your super cute cupcakes.

I think you might need a hotter oven. The first time I made the Hot Choc cupcakes from this book, they were perfect, the second time they sank, and I am almost certain it was because I had turned the oven down a notch.
