WIP Wednesday Thursday

Well, here's one of the two sweaters I promised you. This is my February sweater project that I am doing as part of a knitalong. The pattern is the top down wrap cardi from Knitting Pure and Simple with a few minor changes. The body and trim of the sweater is complete so all that is left are the sleeves and blocking it. The sweater knit up incredably fact considering that there are two front panels. The entire thing is scheduled to be complete by the end of next week, just in time for me to start my March sweater. My hope is to have both sweaters completed by the begining of April so I can wear them during our trip to Oregon.

My January sweater which was Jared Flood's Smokin' sweater has been unavailable for photographing due to regular wear by it's new owner. Hopefully I will be able to snap a few shots of it tonight so I can post it here and on my Ravelry project page.

In other knitting news I started working on my Malabrigo lace shawl again which is a sample for the shop. I started it sometime last Spring and became frustrated with the needles (Addi Lace, but that is a story for another time.) I put the project down after the Malabrigo mill fire since we sold out of the lace yarn and wouldn't be able to get more for at least 6 months. Long story short, we have had the lace yarn back in stock for a couple of months now so I decided it was time to finish the sample. I switched to a new set of needles and made it through one pattern repeat yesterday while watching Top Chef. I am now on the last pattern repeat so if I can stand to do one row a night it should be done early next month. That is all for now, I might have more updates tomorrow.

Nothing to see here

Sorry about the lack of updates, the past week has been a little crazy. Philip and I both got the flu early last week, me a little worse than him, so I spent most of last week in bed. Then, we both got better for the weekend so we figured everything was good and we made plans for yesterday which was our first non-sick day off. Long story short, Philip acquired some kind of evil stomach virus yesterday and so he is home sick again while I am trying to take care of him without contracting his disease. Anyway, tomorrow I will post pictures of the finished Smokin' sweater and my progress on my wrap cardi and early next week I will have a new recipe to post.

Slaw

I bought a Napa cabbage to make the shumai and I only needed 1.5 cups for the filling. For those of you who don't know, a Napa cabbage is about twice the size of a normal head of cabbage so I ended up with quite a bit of leftover cabbage. I have been trying really hard not to throw out so much food, especially produce, so I made it a mission to find a use for this cabbage. I am not much of a cabbage person, even with a mild cabbage like the Napa. After looking through tons of recipes that didn't appeal to me I decided to use it for the easiest thing I know, coleslaw. I love homemade coleslaw on sandwiches, veggie dogs, and even by itself. This slaw can be put together in about 10 minutes and it is perfect on some crusty bread with some baked tofu.



Napa Slaw
8-10 cups Napa cabbage, coarsely shredded
1/2 cup carrots, shredded
1 cup Veganaise
3 Tbsp. sugar
3 Tbsp. apple cider vinegar
2 Tbsp. oil oil
1 tsp. celery seeds
1/2 tsp. salt
dash of black pepper

In a small bowl, mix the Veganaise, vinegar, sugar, celery seeds, salt, and black pepper. This will be your slaw dressing.

In a large bowl, toss together the cabbage and the shredded carrots. Slowly add in the slaw dressing until the cabbage is thinly coated but not two wet. The salt will bring out some of the water in the cabbage leaving you with a nice moist salad. Let the salad sit covered in the refrigerator at least an hour. Serve on a sandwich or by itself with a little fres ground pepper on top.
