My friend James decided that for his birthday he wanted a flan instead of the traditional cake. I tend to get very excited at the opportunity to veganize anything so I took the challenge and after a few tries I came up with this super cheap, super simple flan recipe.
What you need:
1/2 cup sugar
1 box Goya flan mix (found by the pudding mixes)
2 cups soymilk
1/2 tsp. Agar (I get this from an Asian grocer, but most health food stores carry it)
Prepare the Goya flan as directed on the box replacing the milk with soymilk. When your mixture comes to a boil mix in the agar and remove from heat. Pour into molds and refrigerate for 2 hours. Invert the flan onto a plate and serve.
I also came across some tofu/coconut milk versions in my search, but nothing came out as nice as the Goya mix.

Do you have an all-purpose recipe for making an egg substitute, or does it vary depending on what kind of cooking you're doing?
Specifically, in my attempt to stop using eggs, it is of utmost importance for me to be able to make delicious cookies. So far, my attempts have been rubbery and/or bready.
I buy great vegan cookies in the store, and can bake very nicely with eggs, but...
In short, do you have a vegan oatmeal cookie recipe that I could try?

I am not a big baker, but when I do I use Ener-G egg replacer. It is a dry mix and a box is equivalent to 113 eggs. There are tons of other methods for replacing eggs including bananas (1/2 banana= 1 egg), tofu (1/4 cup soft tofu= 1 egg), or apple sauce (3 Tbsp= 1 egg).
Here's a really good oatmeal cookie recipe from vegcooking.com. Enjoy.
Oatmeal Cherry CookiesMakes about 4 dozen cookies
1 cup margarine, softened to room temperature
1 cup dark brown sugar
1/2 cup granulated sugar
Egg replacer equivalent of 2 eggs (prepared)
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
2 cups old-fashioned oatmeal, uncooked
1 cup dried cherries
Preheat the oven to 350°F.
Cream the margarine with the sugars and beat until well blended. Add the prepared egg replacer and vanilla and beat for several minutes until light and fluffy.
In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cinnamon. Add them to the margarine mixture and beat until well blended.
Stir in the oatmeal and dried cherries. Drop the batter by tablespoonful;s onto a lightly greased cookie sheet and bake until the edges are just turning brown—about 12 minutes.
Let the cookies cool in the pan for a couple of minutes and then remove and place on racks to cool completely.

For the flan, you did not mention what one should do with the sugar. I would melt it, place it in the mold and then I'd pour the hot flan mixture over it. Is that right?

What is the reason to add the agar since the Goya Flan mix itself already has Carragheen, both are derived from the same source, seaweed. Both will make the flan turn into the custard-like consistency. Just wondering if it makes it better?
Ingredients:
Sugar, Dextrose, Calcium Carrageen, Salt, Vanillin, FD&C Yellow #5.
I added the agar to firm it up just a bit more.
My son is allergic to eggs and so I have been on a search to find an egg substitute especially for cookies, cakes, and muffins. I have tried Ener-G- Egg Replacer and it works great in his wheat-free bread, but have had the best results with Ground Flax Meal from Bob's Red Mill. I use 1 Tbsp. flax meal mixed with 3 Tbsp. warm water for 1 egg. Let it sit until it gets thick and mix it in like you would an egg.
